Global demand for Bolivian Quinoa increasing

According to a NASA report from 1993, quinoa is "rich in protein and with desirable proportions of important amino acids". Were the space agency ever to send astronauts on long-term space missions, this crop could provide them with most of the nutrition they'd need. International demand for quinoa has been rising, and so has its impact on the country of origin, Bolivia.
